What it is

Amylase (specifically alpha-amylase) is a glycoside hydrolase enzyme that catalyzes the hydrolysis of internal alpha-1,4-glucosidic linkages in starch, glycogen, and related polysaccharides. In dietary supplements, digestive amylase is commonly derived from fungal fermentation (such as Aspergillus oryzae) or non-animal microbial sources.
